How to create great roast potatoes:
Oven to 190c
Recommend Maris Pipers
Peel, cut to size (about the size of half an apple)
Par boil for 15 mins, drain, and shake to fluff up.
Into a baking dish with either olive oil, goose fat or butter. All great.
Into oven for 30 mins.
In a dish tear up some herbs (Rosemary or thyme or basil), throw in some garlic bulbs, sprinkle with olive oil and a little white vinegar and mix up.
Now the magic bit! Remove potatoes from the oven and, with a potato masher, gently press to just flatten them a little.
Spread the herb mixture over them.
Back in the oven for 25 mins.
